What shawarma is
Shawarma is meat, usually chicken or lamb, marinated with spices, stacked on a vertical spit and roasted slowly, then shaved off in thin slices. In the Lebanese style it is wrapped in thin flatbread with garlic sauce (toum), pickles and sometimes chips, or served as a plate with rice, salad and hummus.
What this list shows
These are food businesses with shawarma in their registered name, from Lebanese and Syrian grills to takeaway counters. Shawarma is also served by many restaurants that do not put the word in their name, so check the Lebanese restaurants on our main map as well.
How to spot a good one
Look for a spit built in house from whole pieces of marinated meat rather than a uniform manufactured cone. The edges should be crisp and caramelised. The garlic sauce should be sharp and fluffy, and the bread should be warmed on the grill before wrapping.
Hygiene ratings
Meat on a spit must be cooked through before it is carved, so kitchen standards matter. Each listing shows the premises' Food Standards Agency rating; a 5 is what you want.

Shawarma is marinated meat stacked on a vertical spit, roasted and shaved thin, wrapped in flatbread with tahini or garlic sauce, pickles and salad. The Levantine cousin of the doner and the gyro, it is the great Middle Eastern street food. Lebanese shawarma is typically chicken with toum (garlic sauce) or lamb with tarator (tahini).
- 02Shish Taouk
Shish taouk is Lebanese grilled chicken: cubes of chicken marinated in garlic, lemon and yoghurt, skewered and grilled over charcoal, served with toum, pickles and flatbread. Juicy, garlicky and charred, it is the chicken counterpart to lamb kebab and one of the most ordered grills on the Lebanese menu.
- 03Hummus
Hummus is a purée of chickpeas, tahini, lemon and garlic, the cornerstone of the Lebanese table. The good version is smooth, generous with tahini and lemon, and warm-savoury rather than the thick, bland supermarket kind. Served with a pool of olive oil and warm flatbread, it is the first thing to judge a Lebanese kitchen by.
- 04Kofta
Kofta (kafta) is Lebanese spiced lamb mince, kneaded with onion, parsley and seven-spice, shaped on skewers and grilled over charcoal, or baked with tomato and potato. Juicy, herby and fragrant, it is the lamb centrepiece of the Lebanese grill and a versatile base for baked dishes too.
